About Carol Simontacchi
As a nationally renowned speaker and educator, Carol Simontacchi’s first professional love is nutrition science and counseling, and enjoys sharing her knowledge of the profession with audiences around the country.
Carol has authored numerous books and training courses including best-selling book, Your Fat is Not Your Fault (NY:Jeremy P. Tarcher/Putnam,1998), All About Chitosan (NY:Avery Publishing Group, 1999) Heart Health for Women (Bozeman, MT:Kriegel Group Publishers) and The Crazy Makers: How Fast Foods are Killing Our Minds and Destroying Our Children, (NY: Jeremy P. Tarcher/Putnam, 2000). Her latest book, A Woman’s Guide To A Healthy Heart, was released in January 2004. Her latest weight loss book, Weight Success for a Lifetime, will be published in Spring 2005, as well as her timely book on inflammation, Natural Alternatives to Vioxx and Celebrex which will be released in March, 2005.
Carol is the author and designer of WINGS: Weight Success for a Lifetime, the only holistic weight management curriculum on the market.
Carol is a contributing writer for the Healthy Hearts newsletter, published online on eDiets.com.

She has appeared on the Maury Povich Show, the Dr. Atkins’ Show, The Home Page (NBC and MSNBC), the 700 Club, KKLA, Positively Texas, the Ronald Hoffman show, the Jim Bohannon Show, Here’s To Your Health, and hundreds of other local, regional, and national radio and TV shows. Her books have been featured in Woman’s Day, First for Women, Newsday, and many others.
Carol earned her Master of Science Degree from Columbia Pacific University in 1997.
Carol obtained her certification as a Clinical Nutritionist through the Clinical Nutritionist Certification Board, and is a professional member of the International and American Associations of Clinical Nutritionists. She served as the President of the Society of Certified Nutritionists and remains active in that organization. She has served on the Education Committee of the National Nutritional Foods Association.
She is a professional speaker, specializing in the area of brain nutrition, weight management and diet enhancement. She is often featured at churches, organizations, businesses, special events, medical and dental associations, hospitals and support groups.
Carol lives with her family in Ft. Myers, FL.
